Official instructions for anything beyond basic usage are honestly lacking for all operating systems. Specifically for Windows, the best I have available for you off-hand is something I threw together a couple weeks ago for someone looking to use the portable ClamAV install package:

As far as command line usage goes -- the arguments and such are all the same on Windows as they are on Linux or Mac, although there are a couple minor differences.
For details, you can review the --help output for each tool.

Feel free to ask the list if you have more questions. I encourage you and everyone else to contribute back usage guides by submitting pull requests to our clamav-devel and clamav-faq Github repositories.

In the future, I also intend to add more detail for installation, recommend basic usage, and advanced usage guides into our documentation as time permits.
